Pre Heat Oven to 375 degrees. Marinate butterflied chicken breasts 4 hrs or overnight prior to baking with Jen’s Sweet Poppy or Sweet Poppy (Lite) dressing. Prepare stuffing of your choice (Stove Top stuffing works great in a hurry). Add 1/3 cup dried cranberries. Add 1/3 C small chopped Granny Smith apples. Place open butterflied chicken on a plate. Top 1 side of each chicken breast with stuffing. Fold other side of chicken over the top of stuffing. Keep in place with small wood skewer or cooking twine. Place chicken in non-stick baking pan. Cook for 45 min to 1 hr (depending on size of breasts).
Brush with Jen’s Sweet Poppy Seed or Poppy Seed (Lite) dressing on chicken while cooking. With approx 5 to 10 min to cook, heavily brush or drizzle Jen’s Sweet Poppy or Sweet Poppy (Lite) dressing on chicken.
Serve with a side of Jen’s Sweet Poppy or Sweet Poppy (Lite) in a soufflé cup. Enjoy with Asparagus or Broccoli and a side salad.
